Quick dessert with raspberries and mascarpone

Make the following composition of mascarpone cream, cottage cheese, yolk, Amaretto, powdered sugar, vanilla sugar.

Mix until it has a very creamy consistency.

Cake with mascarpone cream and raspberries is another cake from the series of cakes with seasonal fruits and without baking.
Because the heat has made its presence felt and the oven is becoming more and more difficult to use, I try to focus on desserts that are as easy to prepare and without baking.
Cake with mascarpone cream and raspberries I can say that it is delicious. It takes longer to prepare my ingredients than the preparation.

200 g digestive biscuits
100 g melted butter

250 g mascarpone Delaco
250 g fresh cow's cheese 0.02% Delaco fat
250 g acacia honey (or powdered sugar)
250 ml liquid cream
peel of a lemon
a vanilla essence (2ml vial)
10 g gelatin
300 g fresh raspberries

Method of preparation
Put the biscuits in a food processor and grind until they look like breadcrumbs.
Over the crushed biscuits add the butter and continue mixing until the composition is homogeneous.
Wallpaper a detachable round shape (26 cm) with baking paper, spread the biscuit composition in a uniform layer and press with a spoon.
Let the tray cool until we prepare the cream.

We hydrate the gelatin in 50 ml of cold water.
In a bowl put the honey, add the cottage cheese and mascarpone cream and mix until well blended.
Flavor the composition with lemon zest and vanilla essence.

Heat the gelatin until it dissolves (without boiling) and add it over the cheese composition, homogenizing.
Beat the whipped cream and add it over the cream cheese, incorporate well.
Remove the tray from the refrigerator and pour the cream alternating in layers with fresh raspberries.
Level well and let the tray cool for a few hours.
Garnish with fresh raspberries and portion according to preference !!

I like desserts more and more by the glass, especially now during the summer and especially those based on fresh fruit. They are made quickly and easily and we do not even turn on the oven for them.

I do not know how it is that guests are always pleasantly surprised by such a dessert by the glass, served cold, refreshing and fragrant. It has happened to me more than once to praise these simple creams and to ask for the recipe, which makes me believe that many people do not know and practice them. Honestly, we don't have any tradition in this kind of desserts. Neither our mothers nor our grandmothers did that. Or at least mine didn't.

And yet these desserts are so light and versatile that I have almost nothing to write about them. In principle we need natural cream, fruit puree or fresh fruit and what else is found in the house good to put in a glass. Biscuits, champagne biscuits, chocolate or grated chocolate drops, dried fruit, maybe nuts or hazelnuts, depending on taste. I was left with the raspberry tiramisu cookies and some chocolate drops that were too small for another recipe anyway, so I successfully used them for today's dessert.

Tiramisu with raspberries is one of my favorite desserts during this period. Simple and quick to prepare, based on the perfect combination of mascarpone, whipped cream, coffee and raspberries, there is never anything left of this dessert. But really nothing, not a drop!

(for 6 servings)

30 biscuits
250 g mascarpone
2 yolks
150 ml liquid cream
50 g powdered sugar
150 ml espresso
50 ml chocolate liqueur
50 milk
250-300 g raspberries

First of all, we prepare a strong coffee (espresso), which we leave to cool. Mix mascarpone with sugar until you get a frothy cream.

Add one egg yolk, stirring after each until smooth.

Incorporate the whipped cream, little by little, letting the mixer do its job at medium-high speed.

In a bowl, mix the coffee with the chocolate liqueur and milk. We soak the biscuits in it, taking care only to pass them through the liquid composition, without soaking them too hard. We put a row of biscuits in a tray, a bowl with higher edges, or even on a plate (the first row consists of 10 biscuits). Pour a third of the cream over the first layer of biscuits, then sprinkle with raspberries.

Repeat the operation with biscuits, cream and raspberries twice, then let the bowl cool overnight or a few hours.

During the holidays you don't have much time to cook, but a glass of dessert with raspberries and mascarpone is prepared in a maximum of 15 minutes. In conclusion, we can pamper our loved ones with something delicious, ultra fast and easy to make.

Unbaked cake with yogurt and mascarpone

I love cakes without baking, especially in summer when I'm not in a hurry to use the oven because of the heat. The most common combination of creams is probably the one with mascarpone and whipped cream or the one from the diplomat cake, but for the latter there is something to work on, so now I have chosen a much simpler and cooler version, namely Greek yogurt with mascarpone. It's not my idea, I saw it the other day on the net and she smiled at me because it seemed to me a cream only good for this heat wave.

You can replace the yogurt with cottage cheese or ricotta, the cake will come out just as good.

The recipe is not new, I'm sure you've seen similar recipes on the internet, but not on my blog, I didn't try this cream, so last weekend when my little ones were longing for something sweet, I prepared this fresh and light cake.

You can also prepare it as a dessert by the glass or with a top of crushed biscuits mixed with butter (like cheesecake) or with sheets of pandispan or puff pastry. All combinations are welcome.

The good part is that it can be prepared with almost any fruit, I chose what I had in the fridge, namely bananas and lime. I will probably try it with raspberries or peaches in the near future, I think it is delicious!

  • 200g biscuits
  • 250g mascarpone
  • 400ml Greek yogurt 10% fat
  • 7g gelatin
  • 250ml milk
  • 50g old
  • 1 file
  • 250ml fresh

Mix the yogurt with mascarpone and add 50g of sugar. We leave the mixture aside and prepare the gelatin, we hydrate it in 50ml of cold water for 10 minutes and in a saucepan we heat 100ml of milk. When the milk is hot, turn off the heat and add hydrated gelatin. Mix well and let it cool a bit then pour over the mixture of yogurt and mascarpone.

In a cake tray measuring 30x11cm or round with a diameter of 20cm we put a plastic foil. We pass the biscuits through cold milk and place them next to each other in the tray. Pour half of the cream then put the cleaned bananas and sprinkled with lemon juice. Pour the other half of the cream and then put another row of biscuits soaked in milk.

Cover with foil and let the tray cool for 4 hours. I left it from evening until morning but 4 hours are enough for the cream to harden.

Remove the tray, unfold the foil and turn the cake over on a plate.

Garnish the cake with whipped cream, lime slices and chocolate. Cut slices with a knife soaked in cold water and serve.

Depending on the size of the bars, you can get about 10-12 pieces from this recipe. I had 12 bars of 50 g each. They should not be very thick (mine was about 3 cm in diameter, including the glaze) or very long (because they will be difficult to glaze). Keep cold until serving.
