Shrimp curry

Heat the oil in a pan. Add the onion and grated ginger and cook for a few minutes, until softened. Add the curry powder and fry for 1 minute. Add the chopped tomatoes and coconut milk and let them set. -a boil, then let them simmer for 5 minutes.

How to make shrimp with sweet potato curry and lemongrass

To prepare the best shrimps with curry from sweet potatoes and lemongrass you do not need many ingredients.


  • 2 green onions
  • 500 grams of sweet potatoes
  • 1 stem of lemongrass
  • 1 Chinese cabbage
  • olive oil
  • 1 tablespoon yellow curry paste
  • 1 can of coconut milk
  • 150 ml of water
  • salt
  • pepper
  • 1 file
  • 1 packet of shrimp

Prepare the fresh ingredients. Wash and peel green onions and make sure you remove the white part of the leaves. Wash and peel the potatoes and cut them into equal slices. Remove the lower part and the outer leaves from the lemongrass and keep the yellow section. It is also used in Thai cuisine. Cut the yellow section into 4-5 cm lengths. If you want the food to be more flavorful, you can create shallow cuts along the lemongrass strips, as this trick will help release the lemon flavor.

After you have prepared these ingredients, the next step is to prepare the curry sauce. You need a deep frying pan, in which to add two tablespoons of olive oil and let it heat up. Add the curry paste and the white part of the finely chopped green onion. Use a wooden spoon to mix the onion with the oil. It is recommended to wait at least two minutes until the flavors penetrate. Add the coconut milk, but be sure to pour it from a shorter distance. Then add the lemongrass, sweet potatoes and water. After you have added all the ingredients for the sauce, add a little salt and pepper. Leave the pan on medium heat for about 15 minutes, during which time you can check if the sweet potatoes are sufficiently penetrated.

After the potatoes are soft enough, prepare the shrimp to add to the pan. After washing them, wipe them with a kitchen towel to remove excess water. Season with salt and pepper, then add to the pan with finely chopped Chinese cabbage. Cover the pan with aluminum foil and wait about five minutes. Use a wooden spoon to occasionally mix the sauce and shrimp. Once the shrimp are ready, remove the lemongrass and add salt and pepper.

Portion the shrimp and serve immediately. You can finally use the green onion leaves and a few slices of lime for decoration.

Shrimp in green curry

Green curry paste works wonders in this recipe. Look for one already packed, and if you can't find it, you can prepare it from lemongrass, ginger, lime and hot peppers.

Cook for 30 seconds, in hot oil over medium heat, curry paste and anchovy paste.

Add the coconut milk and brown sugar over them. Let them boil together for 3 minutes, stirring occasionally.

Add the shrimp and let them boil for 2-3 minutes. until the shrimp are perfectly done.

Add finely chopped green onions and lime juice to taste. Season with salt if needed.

Serve the shrimp with boiled rice.

Step 1

Shrimp with garlic

In a large skillet, heat the butter and oil until the butter is melted. We put 3 cloves of garlic cut into thin slices, I claim a few seconds. Be careful not to fry the garlic too much, it becomes bitter if it is too browned.

Add shrimp, season with salt and pepper. Mix well, leave on the fire, over high heat, 2 minutes. If you use frozen shrimp, you can defrost them and drain them well before adding them to the pan for a dish with less sauce, or you can put them directly in the pan for a dish with more sauce.

Put the orange juice and let it cook for another 2-3 minutes or until the shrimp are almost ready. At the end, add the finely chopped greens and 3 cloves of garlic passed through the press. Let it simmer for another minute, over high heat. We match the taste of salt and pepper.

Serve the garlic shrimp hot as soon as I take the pan off the heat. You can serve them with pasta, which you boil separately and add over the shrimp at the end, together with the greens and mix very well. Or you can serve them with toast, perfect for soaking in butter sauce, garlic and orange juice. I go great with any garnish, from rice to cous-cous, from potatoes to mashed sweet potatoes or parsnips. Good appetite!
