The gluten-free muffins were a small challenge that I had set myself, to make sweets suitable for my celiac friends that did not start from a recipe that included a mix of flours already made. So I tried to calibrate the rice flour with potato starch and corn starch to make the base, which I then enriched with cocoa, vanilla, coconut flour and chocolate chips. Well, who says the gluten-free recipes they are not tasty certainly has never tried these sweets! Soft, fragrant and tasty, these gluten-free muffins they surprised even myself (I admit it!). How to make gluten-free muffins
Put the three flours in a bowl and mix them.
Add sugar and yeast and mix again.
In another bowl, mix the egg, milk and oil.
Then add the compounds and divide them into two bowls.
In one add the cocoa and the chocolate chips, in the other the coconut flour and the vanilla essence.
Transfer the dark mixture to the muffin mold first, keeping a little to one side, and then the light one.
Then add the remaining dark in the center of each muffin and bake at 180 ° C for 20 minutes.
Your gluten-free muffins are ready to be enjoyed.
