  1. Preheat the oven grill.
  2. Combine cheese, ale, mustard, thyme, salt and pepper in a pot over low heat or in a double boiler. Melt, stirring occasionally, until smooth.
  3. Spread mixture on bread, and heat under the grill for about 1 minute and serve, or spread on toasted bread and eat immediately.

This dish was originally known as Welsh rabbit, for reasons that aren’t exactly clear but that most agree were intended to imply rudeness to the Welsh. During the late 18th century, derogatory terms such as rabbit became frowned upon in polite company and the name evolved into rarebit, meaning a choice morsel. Today, rarebit has come to mean tasty morsels of bread covered in a mustardy cheese sauce. Yesterday Mike and I had a little midnight snack! We aren’t really midnight snackers, but I had just finished watching Blue is the Warmest Color and was feeling peckish – there are a lot of spaghetti shots in the movie. Which is very long and very French and very much full of sexy lesbian scenes. It won a Palme D’or in 2013 and is very highly regarded, except on Netflix, where it has a rating of one star. When Mike suggested it I was a little skeptical but was very quickly drawn in. Mike not so much because he fell asleep. The acting was excellent so I recommend it if you like foreign films about the exquisite ecstasy of falling in and out of love.

Anyway, when I finished the movie and woke Mike up, we decided we’d have a little bit of fun and shoot a post, casual style. I’ve always wanted to make Welsh rarebit and we magically had all of the ingredients in the fridge, so we went for it! Welsh rarebit, or rabbit, as it’s called sometime, is a classic British dish of melty beer-y cheese on toast. It sounds pretty simple but like most simple things in life, it is absolutely bomb, especially at 2 in the morning. Welsh rarebit is so much more than cheese on toast, especially when you use quality ingredients. You need good bread and you defintely need aged cheddar.

Line a baking tray with aluminum foil. Turn on your broiler to medium-high.

Melt the butter in a medium-sized pot over medium heat. Add the shallots and garlic and fry for a couple minutes or until soft and fragrant. Using a wooden spoon, mix in the mustard powder and flour. Let the mix cook and bubble for about a minute, stirring frequently. Add in the ale and Worcestershire sauce. Once evenly combined, add the grated cheese slowly so that it warms and melts. The mixture is quite dry and this is how it should be. Gradually add the cheese and continue to help it melt by stirring. Be careful not to let the mixture boil. You just want it warm enough to melt the cheese.

Once melted you should have a smooth, thick and almost elastic-like mixture. Turn the heat off and leave to cool slightly.

Toast your slices of bread and then place on the prepared baking tray. Divide the cheese mixture evenly among all pieces of bread, taking care to spread it out so it covers the entire top of the bread. Broil under high heat for 4 – 8 minutes or until the tops have colored to your liking.

Enjoy immediately with some arugula on the side. I think the peppery leaves are a great balance to the rich cheese topping.

Why do they call it Welsh Rarebit?

In Welsh it is called Mochyn Du. The recipe is over 2 centuries old and common in Southern and Western England and the rarebit/rabbit part is the cheese sauce that is poured over toasted bread.

Welsh Rarebit origin is a little sketchy, but it is said the dish was a way to highlight the Welsh wheat bread and cheese. Some say that toasted cheese is so popular in Wales that it spread like rabbits, others say only the wealthiest of people could afford to eat rabbit, so they alternative &lsquoWelsh rarebit&rsquo was born. A much more appetizing name I think and since there is no rabbit in the dish, a more befitting name.

Melt butter

Place ¼ cup of butter in a saucepan and melt over low heat.

Add flour and seasoning

Mix in ¼ cup of flour, ½ teaspoon of salt, ¼ teaspoon of pepper, ¼ teaspoon of mustard, ¼ teaspoon of Worcestershire sauce, and 2 drops of Tabasco sauce. Cook while stirring for about 5 minutes until the sauce is smooth and bubbly.

Pour in the milk

Remove the saucepan from the heat. Stir in the milk gradually before returning to the heat. Bring to a boil while stirring constantly.

Add beer

Slowly add ½ a cup of beer and cook for 1 minute, still stirring.

Add small portions of the Cheddar cheese until it is completely incorporated. Remove from heat.


Serve poured over toasted bread or toasted English muffins.
