- Prepare the tray with butter and flour and pour the composition into it, then sprinkle the fruit on top. As they do not enter the dough very easily, we can push them a little with a spoon.

- Place in a hot oven until well cooked, doing the toothpick test.

- Serve powdered with powdered sugar.

Cherry cake recipe and coconut meringue. As soon as the summer fruits appear, you should try this fluffy cherry cake! It's a sweet, sour dessert, refreshing and only good to serve with a coffee or an iced tea!

  • It took:
  • 160 g wheat flour
  • 250 g butter or margarine
  • 1 sachet of baking powder
  • 200 g sugar
  • 5 yolks
  • 1-2 tablespoons lemon juice
  • Meringue:
  • 5 egg whites
  • 150 g sugar
  • a pinch of salt
  • 3 tablespoons cornstarch
  • 2 tablespoons ground almond flakes
  • 3 tablespoons sesame seeds
  • 3 tablespoons coconut flakes
  • Furthermore:
  • about 1 kg of cherries or sour cherries
  • powdered sugar for topping

In a bowl, mix the flour with the baking powder.

Add sugar, soft butter, egg yolks and lemon juice.

Knead the sandy dough and divide it into two equal parts.

Distribute half of the dough in a tray greased with butter measuring 25 x 35 cm.

Press the dough with the back of a spoon.

Put the rest of the dough in the freezer.

Spread the well-washed cherries or cherries evenly on top. They can be placed with seeds as well as without seeds.

For the meringue, mix the egg whites with a pinch of salt.

Gradually add the sugar, continuing to mix.

Stir in cornstarch, then add sesame seeds, coconut flakes and ground almonds.

Bake the cake in the preheated oven at 170-180 ° C for about 50 minutes.

After covering the tray with cherries, in a larger bowl add the flour, sugar, vanilla sugar, salt and mix a little with a whisk. Then add the milk, eggs, melted butter and continue to mix the whole composition until everything is smooth. The dough is similar to pancakes.

The resulting composition is poured over the cherries in the pan. It is placed in the preheated oven at a temperature of 160 degrees Celsius for a period of 40-50 minutes. You will notice that the cake starts to brown and grow quite a lot, but after it cools it will return to normal.

Vegan cake with fluffy and creamy coconut

Juicy and creamy, the vegan cake with coconut is very easy to make, it does not contain milk, eggs and butter.

Ingredients for vegan coconut cake:

Dried ingredients:

-180 gr oatmeal (gluten free, if you prefer), ground into flour

-130 gr of unsweetened coconut, transformed into flour

-150 g of coconut sugar (or 150 g of white sugar)

-2 teaspoons of baking powder

-1 teaspoon baking soda

Liquid ingredient:

-160 ml of apple juice or 160 gr of peeled zucchini

-80 gr maple syrup or agave syrup

-1 tablespoon white vinegar or apple cider vinegar.

For the glaze:

Method of preparation:

Peel the sweet potatoes and cut them into cubes of about 2 cm. Boil in water until soft.

The oat flakes are ground together with the coconut flakes.

Put all the dry ingredients in a bowl.

Preheat the oven to 180 degrees Celsius.

Take 2 cake trays with a side of 18-20 cm and line them with baking paper.

Mix the liquid ingredients well with a blender, then pour over the dry ingredients. Stir until smooth.

The obtained dough is divided equally in the 2 trays and baked for 30-35 minutes. It is ready when the test with the toothpick, it comes out clean from the middle of the dough.

While the countertop is still in the oven, you can prepare the icing. Make it simple, mixing all the ingredients with a blender until you get a creamy mixture.

After the cake has cooled completely, it can be glazed and decorated with coconut flakes. Refrigerate for at least 3 hours before serving.

Prepare the fluffy cake with yogurt and cherries

First we put eggs and sugar together in the mixer bowl. Add a pinch of salt and mix everything for at least 10 minutes until the eggs become like foam and triple in volume. Meanwhile, heat the oil and butter, leave it on the fire only until the butter melts. Let's put it aside. I remove the cherries from the seeds, then I powder them with a spoonful of flour, which absorbs the excess liquid. If I use frozen cherries, I don't thaw them, I use them like ice cream.
Mix flour with baking powder.
When the eggs are well beaten, add the vanilla extract. I mix the yogurt with the oil and mix vigorously with a spoon, then I put it over the eggs.
Sift and flour. With a spatula with movements from bottom to top, mix lightly until the dough is homogeneous. Be sure to touch the bottom of the bowl with the spatula because the yogurt tends to settle to the base. Be careful not to mix excessively, then it will be lost from the built-in air. We also add chopped walnuts. Mix lightly 2-3 times.

Preheat the oven to 180 degrees. We need a 24 cm round tray or a 20/30 cm rectangular one. Put baking paper, then pour the dough evenly all over the tray. With the spatula we level easily. At the end we put the cherries. Bake for 35-40 minutes until well browned and pass the toothpick test. Leave to cool, then serve. Enjoy!
