Ingredient:

Pizza dough - pu (fos) r and simple!

Ingredients for a fluffy wheat, worthy of a gastronomic master:

  • 4 measures of flour
  • 1 teaspoon salt
  • 3/4 cup of milk
  • 1 packet of yeast
  • 4 well beaten eggs
  • 1/2 packet of butter

Method of preparation:

  1. "Powder" the flour and salt in a heated bowl make a small hole in the dry mixture and add the preheated milk.
  2. Add the chopped yeast.
  3. Let it rest for 5 minutes, until the yeast has dissolved.
  4. Add beaten eggs, stirring lightly in flour.
  5. Knead the mixture until it becomes homogeneous and elastic. Incorporate butter.
  6. Cover and let rise in a warm place for 40 minutes or until doubled in size.
  7. Start kneading again lightly to aerate the dough.
  8. Spread the dough to the desired thickness (the thicker, the fluffier), on a work surface powdered with flour.
  9. Carefully place in a pizza tray. Add the desired toppings.
  10. Let it sit for another 10 minutes. Then cook over medium heat for 20-25 minutes.

Put the dough ingredients in the bowl of the Electrolux Assistant. Knead the tart dough using the special hook. Divide it into 4 equal parts and roll out the dough pieces with a rolling pin.

Place each piece in special trays for mini tarts. Preheat the oven to 180 degrees using the up / down heating program. Spread a piece of baking paper over each tray with dough and place ceramic baking balls on top or if you don't have one, put rice grains or beans.

Bake the tart dough for 20 minutes. Mix the ricotta cheese with the egg and season with salt and pepper. Fill the 4 mini tarts with this composition, then place pieces of asparagus, cherry tomatoes and cheddar cheese on top.

Tart crust it can be used in several recipes, both for large tarts and for mini tarts. Fruit tarts are one of my favorite recipes and a childhood dessert. Everyone enjoys, from child to adult, when the table has a tasty and colorful mini tart.

This dough can also be used for biscuits used in Siret cake, because it is fragile. And in general it can be used for simple biscuits, full of flavor and taste of milk and butter. And large tarts or mini tarts can be filled with any type of cream, fruit or cream.

The recipe for tart dough has a clear general principle regarding the two main ingredients white flour and butter: the amount of butter must represent half of the amount of flour used.

As for the flour, it is good to use white flour 000 or 550, flour 550 being named plain flour in Great Britain, flour 0 in Italy, flour 55 in France and all purpose flour in the USA. Flour 000 is the flour specific to pastries, being the finest of all types of flour, and 550 it's a little harder, but it's also used in pastries.


Ingredients Polish pastry recipe

  • 50 g soft butter 80%
  • 150 ml whole cow's milk
  • 7 g dry yeast
  • 75 g caster sugar
  • 2 sachets of vanilla sugar
  • 30 g of honey

  • 300 g quality flour type 000 (cake)
  • a pinch of salt
  • 1 teaspoon lemon peel
  • 1 tablespoon oil

IMPORTANT! Read the recipe carefully. I used whole milk and quality flour - I always use for pastry dough flour 000 and I always use whole cow's milk, the fattest (consequently the most consistent). If you use skim milk and / or 650, 550 or other flour, it makes sense that the dough will come out thinner and then you will need to supplement the amount of flour. I do not accept the comments of certain malicious and greedy people.

  • 70 g 80% soft butter (for greased dough)

Regarding the proportions of the ingredients, there are many versions. Each confectioner-pastry chef has his own recipe. The one I work on is this: sugar: water: glucose = 8: 2: 1. That is, to one part glucose, I put two parts water and 8 parts sugar. This ratio is valid if 75-80% concentrated glucose syrup is used - which is so dense that it barely flows. If the syrup is light, more diluted (35-50% concentration), or honey is used, then more sugar is added to the composition and the sugar: water: glucose (or honey) ratio becomes 10: 2: 1.

The traditional Italian pizza dough is very easy to prepare from a minimum of ingredients. The dough is soft and airy and tastes delicious. With this excellent dough you will get thin pizza as in Italian pizzerias. If desired, you can prepare more dough, which you can freeze and use when you feel like pizza. INGREDIENTS

METHOD OF PREPARATION

1. You can prepare a double portion of dough and put one side in the freezer. When you need it, thaw it at room temperature.

3. For authentic Italian dough you must use durum wheat flour or semolina. If you do not have such flour, then you can add 1-2 tablespoons of semolina.

5. Knead a fairly thick dough and put it in a warm place to rise. Cover it with a damp lid or towel.

6. Gather the leavened dough. Divide the dough into 2 parts. This way you will get dough for 2 pizzas.

Însă, foarte mulți părinţi îşi alungă neintenționat copiii din bucătărie, prin cuvintele și acțiunile lor, din teama de a nu se răni sau chiar la gândul că deranjul de după va fi imposibil de curățat. Pentru a încuraja atât timpul petrecut cu familia, cât și competența culinară, dar şi pentru a vă pregăti copilaşii să fie cât mai responsabili, evitați aceste șase greșeli comune!

* Sunteţi prea critici.Îndepărtarea constantă a copiilor sau faptul că le spuneţi în permanenţă că nu fac nimic bun, le va răpi toată bucuria de a mai petrece timp în bucătărie. Dacă îi învățaţi pentru prima oară cum să facă o omletă şi le corectaţi prea mult tehnica nu veţi face altceva decât să îi speriaţi. Dacă îi lăsaţi, în schimb, să facă lucrurile după propria lor îndemânare, atât cât este, poate veţi fi surprinşi de felurile pe care le vor pregăti. Haideţi să fim serioşi, nu e nevoie să fii chiar un master chef pentru a ştii să faci o omletă! Lăsaţi-i să experimenteze și să facă lucrurile în felul lor, chiar dacă vor strica unele ingrediente! Ar putea veni chiar cu o abordare mai creativă şi cu o tehnică mai bună, la care nici nu v-ați fi gândit vreodată.Atât timp cât nu creează niciun pericol imediat, pentru ei sau pentru ceilalți, cui îi pasă dacă bat ouăle cu o lingură sau dacă sosul nu e întins chiar până la marginea blatului de pizza? Trebuie să primeze entuziasmul și angajamentul!Tehnica adecvată se va forma în timp, de preferință atunci când își vor exprima un interes clar pentru această îndeletincire.

* Vă e teamă să nu se rănească. Adesea temerile părinților îi împiedică să-și lase copiii să manipuleze cuțite ascuțite, aragazul sau ouăle crude. Dar, dacă nu le pasăm suficientă responsabilitate sau nu îi lăsăm să încerce lucruri care ne pot înspăimânta la început, atunci gătitul va deveni plictisitor. Mai mult de-atât, copiii nu vor dezvolta abilitatea de a găti în mod independent și, în cele din urmă, vor evita să mai intre în bucătărie. Provocați-i pe copiii dvs. cu sarcini noi și avansate de gătit sau lăsați-i să gătească singuri atunci când se simt în stare, învăţându-i modul cel mai sigur pe care îl pot aborda şi asigurându-vă că stăpânesc cât de cât tehnica. Trebuie să vă concentraţi cuvintele şi gândurile asupra aspectului pozitiv, cum ar fi cel al deprinderii de a găti independent, în loc să va gândiți constant la pericolele care îi pândesc pe copii la fiecare pas. Lăsaţi-i, la început, să taie căpşuni cu un cuţit de unt, dar apoi, progresiv, să se străduiască să taie felii de ţelină, cu un cuţit de bucătar. Desigur, atunci când copiii încep să manipuleze aragazul sau cuțite ascuțite, este foarte important să-i supravegheați, să-i învăţaţi să fie complet concentraţi asupra sarcinii și să nu le distrageţi atenția. Și atunci când lucrează cu ouă crude sau carne, este important să-i deprindeţi cu regulile de igienă în bucătărie. Încercaţi întotdeauna să vă amintiţi că există un pericol pe termen lung pentru sănătatea copiilor dvs. dacă nu-i iniţiaţi în manevrarea unui cuțit, a preparatelor fierbinţi sau a aragazului, pentru că vor fi legaţi toată viaţa de alimentele procesate nesănătoase sau de junk food. Iată, aşadar, că există şi o latură cât se poate de avantajoasă!

* Dați prea multe indicații și sfaturi. Pe măsură ce abilitățile celor mici progresează, este greu pentru părinţi să-i lase să gândească lucrurile în stil propriu, oferindu-se voluntari la a da informații suplimentare pe care copiii nu le-au cerut, ceea ce le poate afecta încrederea și spiritul de învățare și experimentare. Învățaţi să vă țineţi gura, în cazul în care copiii nu au nevoie de ajutor (același lucru este valabil și pentru soțul/soţia aflat(ă) în plină sesiune de gătit). Atât timp cât nu sunt în pericol, lăsaţi-i să practice fără să le spuneţi nimic. Nu-i cicăliţi până când aceştia cedează şi vă cer ajutorul, iar dacă o fac, nu le explicaţi prea multe. Păstrați lucrurile simple și succinte!

* Vă lăsați copleșiți de stresul acumulat la serviciu. Dacă acționaţi sub semnul stresului, deranjați și înfricoșați copiii atunci când intră în bucătărie, și pur şi simplu le veți înșela aşteptările. Cu siguranţă că zilele în care micuţii doresc să „vă ajute”, vi se vor părea copleșitoare. Este și firesc, după cele 8 ore de muncă, nu prea mai aveţi răbdare să le explicaţi ce şi cum! Faceți tot posibilul să nu-i refuzați, pentru că știm cu toţii că nu vor face altceva decât să devină stresați și să provoace un mic dezastru. Cel mai important lucru este să respiraţi adânc şi să încercaţi să-i faceţi să se simtă doriţi. Nu după mult timp, vor fi capabili să pregătească o salată sau să amestece un dressing și, implicit, vă vor face munca mai ușoară. Fiți primitori! Întreabați-i dacă doresc să vadă, să miroasă sau să guste ceea ce preparaţi și cereţi-le părerea despre modul de adaptare a unei rețete. Permițându-le să se implice şi să-şi ofere opiniile, le trimiteţi un semnal clar că sunt importanţi și că părerea lor contează.

* Sunteţi prea ciudaţi. Uneori ne concentrăm atât de mult asupra curățeniei, încât bucuria creativității se pierde. Dacă vă faceți griji atunci când copiii dvs. fac dezordine și staţi în urma lor cu mopul sau cu un burete, nu veți face altceva decât să-i alungați. Trebuie doar să faceți un pas înapoi și să-i lăsați, pur şi simplu, să facă dezordine. Mult mai indicat ar fi să-i lăsați să facă mizerie, şi apoi să-i rugați să vă ajute la curățenie când termină. Sau şi mai bine ar fi să faceți o regulă ca oricine gătește să facă curățenie. Dacă aveţi copii mici, uneori este eficient să păstraţi în bucătărie un scaun cu două trepte sau chiar o scăriţă specială, pentru a le permite piticilor să vă ajute la curăţarea mizeriei acumulate în chiuvetă. Bineînţeles, după propriile lor puteri!

* Îi forțați să facă anumite lucruri, doar pentru că „așa trebuie” sau „așa e bine”. Niciodată nu trebuie să vă forțați copiii să mănânce, pentru că acest lucru creează un mediu neplăcut în care nici dvs. înșivă nu v-ați dori să luați masa. Evitați să îi obligați să mănânce anumite lucruri, să vă supărați pe ei și să le faceți promisiuni doar pentru ca ei să fie ascultători. Pentru a obține rezultate optime, mult mai bine ar fi să planificați sesiuni distractive de gătit împreună cu copiii sau să descoperiți moduri haioase în care copiii pot interacționa cu mâncarea lor. Chiar și un copil care nu este deloc interesat de gătit se poate distra aranjând produsul final pe farfurie. Până la a-i convinge pe copii să mănânce corect este o cale lungă și anevoioasă, dar care poate fi și distractivă și plină de satisfacții, în ciuda numeroaselor provocări.
