Chocolate cake with Dukan berries


Put 400 ml of skim milk in a saucepan over low heat. In a bowl mix the remaining 100 ml of milk with cocoa pudding and sweetener. When the milk on the fire is hot, pour the pudding mixture and mix continuously with a whisk until the composition thickens. At the end, add a vial of rum essence and cover the cream with food foil so as not to form that crust on top. Leave to cool while we take care of the worktop.


Separate the egg whites from the yolks and mix the egg whites with a pinch of salt.

Mix the yolks with the sweetener, zero cola and rum essence, then add the dry ingredients (oat bran, wheat, cocoa, baking powder, skimmed milk powder, starch and ness), mixing at low speed. Add the egg whites and mix gently with a spatula until incorporated. Divide the composition into 3 and bake 3 sheets. Wallpaper a tray with baking paper, pour the first part of the composition and put the tray in the preheated oven for approx. 10-15 minutes on low-medium heat. We check with a toothpick if it is ready. Leave the first countertop sheet to cool and do the same for the other two.


On a plate we put the first sheet of countertop, we syrup it (for the syrup, we mix 150 ml of water with sweetener and rum essence), we put 1/2 of the cream, 1/2 of the fruit, the 2nd countertop that we syrup, the rest of the cream and fruit and finish with the last syrupy top. Icing: Put the melted chocolate on a steam bath and mix it with 2-3 tablespoons of skim milk. Add the icing immediately over the cake.

Store in the refrigerator.
