Cookie salami recipe
Mix the milk with the sugar and cocoa and put them on the fire to heat and melt the sugar. When they are heated, put the butter in the pan and mix continuously then take it off the heat and let it cool. Add the vanilla when it has cooled.
We make the biscuits by hand or with a spatula.
Fry a little walnut in a Teflon pan and then rub it a little in your palms to shake the shells.
Put the biscuits, walnuts, raisins and candied apricots (which I cut) in a bowl and pour the milk and cocoa syrup over them, stirring until they bind. You may not need all the syrup.
Sprinkle powdered sugar on a plastic sheet and put half of the composition, rolling from side to side to get the air out of the salami. After I have uniformed it, I tie the salami to the ends with string and put it in the fridge until it thickens (about 2 hours).
We do the same with the other half of the composition.
