Honestly, at 3 kilos of donuts, nothing happens if you put it on. Rather than making scalded donuts, I take better advantage of the vitamins contained in them and leave them raw, even if there is this small compromise with the preservative added in small quantities. Do as you think.

Donuts remain strong and crunchy from horseradish! In the original recipe appear (at choice) various spices: peppercorns, celery (leaf), cherry leaves, etc. I made them with black peppercorns, 3 bay leaves and a few strips of horseradish.

  • 500 grams of cauliflower, only small inflorescences, chosen without spots and with the stems removed

  • 250 ml. 9 ° vinegar (I used white wine vinegar)
  • 250 grams of sugar
  • 90 grams of salt (or more, if you prefer)
  • 1 tablespoon grated black peppercorns
  • 1 tablespoon grated mustard seeds
  • 1 fresh horseradish root, peeled and cut into sticks

1. As with any other can, the jar or jars, if you use smaller ones, must be impeccably clean, washed with warm water and dishwashing detergent, thoroughly rinsed and sterilized. If lids or staples are used, they must close tightly and be very clean. If I recommended sterilization in the oven for the Serbian ajvar recipe and other canned recipes, I didn't have as many scruples for the cauliflower donut recipe, because it contains certain ingredients that have a role in themselves. antiseptic and fermentation inhibitor, I mean horseradish and mustard seeds.

So, as a preliminary preparation, I washed the jar well, placed it on a metal tray and filled it with boiling water. It is important that the jar is placed on a metal surface, not to crack due to thermal shock, when pouring boiled water. I let the water cool and emptied the jar just before filling it with cauliflower donuts.

2. As I already told you, choose only small cauliflower inflorescences, perfectly white, without brown spots and clean the stems. Put the cauliflower in a bowl, cover with cold water and add 1 tablespoon of salt (30 grams), stirring gently until dissolved. Let the cauliflower soak for 2 hours in this brine, it will not only give it a salty taste, but will also soften the cauliflower to a small extent, helping us in the operation of filling the donuts.

3. Choose well-baked donuts, as even as possible and not too big (we will not be able to arrange them in jars if they are from the giants). They are washed well, they are chosen to be perfectly healthy and they are washed on perfectly clean kitchen towels.

4. Cut with a sharp knife around the tail, without sticking it too deep, then pull the spine out and shake the donut well to remove as many seeds as possible.

5. Be careful, it is possible to discover, after removing the spine, that some donuts, even if they looked healthy, have traces of rot, mold or blackness inside! They are discarded, keeping only perfectly healthy donuts for filling.

6. Fill the donuts with cauliflower, distributing it evenly.

7. Arrange the donuts filled with cauliflower in a jar, squeezing them well and arranging horseradish sticks among them. If the donuts are not too big, they will enter, with a little insistence, about 4-3 in a row (one in the middle and 3 on the circumference of the jar).

8. Put the water, vinegar and sugar on the fire, adding the pepper and mustard seeds from the beginning. Bring to a short boil (be careful, do not inhale the vapors, vinegar can be irritating) and just at the end add the rest of the salt (60 grams). Remove from the heat and taste the marinade, if you don't find it salty enough, add a little more salt to suit your taste.

9. Attach the cauliflower-filled donuts to the jar with two long horseradish sticks placed crosswise, place the jar on a metal tray, fill with hot marinade and close immediately with a suitable lid or cover with cellophane / paper. of parchment placed in 3 layers and tied tightly with string.

Tip: if you have difficulty arranging the donuts in the jar & # 8211 they are hard and leave them harder to cram & # 8211 as stuffed with cauliflower as they are). Remove them with a whisk, arrange them on a tray and let them cool as much as you can touch them, then you will be able to arrange them without problems, they will be much more malleable.

Cauliflower Donuts in Vinegar, Winter Recipe & # 8211 How to Store

  • After about a week, the donuts are already good to eat, the marinade giving them taste pretty quickly. How do we keep them pleasant and crunchy, without flowers, for as long as possible?
  • The jar of cauliflower donuts is stored in the pantry, in a dark and cool place, as much as possible.
  • It is important to walk in the jar only with perfectly clean utensils (spoons, forks), without traces of other foods, fats, etc.
  • When removing donuts from the jar, the remaining donuts must be fixed, with the same horseradish sticks, which will remain intact, so that they are well covered by the marinade, only then close the jar.

Respecting these little precautions, the donuts will keep perfectly for a long time, being perfect with a steak or a bean dish. May it be useful to you!


The donuts are put in vinegar (add 1 l of vinegar to 2 l of water) and to reduce the strength of the vinegar, add to the 3 l of liquid 1/2 kg of sugar. When the liquid boils, put a row of whole donuts or, if they are cut into slices, cover the liquid and cover and let it heat, until it boils for 1-2 minutes. If the donuts are whole, return for a minute on the other side. If they are cut into slices, take them out immediately and divide them into warm jars, placed on an enameled sheet tray, on the edge of the stove, over low heat. The jars are filled without pressing the donut, leaving them as they sit.

The donuts can all be put in a covered pan. The scalding aims to reduce them from rigidity, thus entering in greater numbers in jars. After they cool down, fill the contents of the jars with the contents of one of them.

After all the donuts have been placed in jars, on top of them are placed, in the cross, 2-3 slices of horseradish in each jar or a teaspoon of mustard seed for each liter calculated according to the volume of the jar.

The vinegar in which they were scalded is immediately divided into all the jars. The jars are tied with double cellophane and kept in the pantry.
