The turkey roll is by definition an elegant dish, ideal for a New Year's Eve meal, but if you add an orange decoration and subtly flavor it with a liqueur-based marinade, then you will really create a sensation among the guests.
The idea for this recipe came to me when I bought the minced meat with which I filled the roll. Seeing that it was already seasoned with finely ground candied oranges, nutmeg, cinnamon and liqueur, I decided to complete the same aromatic range, ideal for a festive winter menu.
The result was beyond my expectations, which were not low at all :)). The turkey meat under the layer of orange slices, remained very tender, and took all the flavors, and the orange liqueur gave an extra refinement and distinction to each slice, which first soaked you with the smell and appearance and then conquered you. with special taste.
The recipe is very simple, I recommend you try it at any festive event.
-5 slices of turkey breast
-400 gr minced meat mixture 65% beef, 35% pork
-spices: pepper, cinnamon, nutmeg
-candied orange peels
-a large red hot pepper
-stelute of anise
-2 organic oranges
Beat the turkey fillets, salt and pepper.
The minced meat is mixed with the spices and add 2-3 tablespoons of candied orange peels, chopped into larger cubes, to be seen in the filling. Add another teaspoon of orange liqueur (it already had liqueur in the initial composition), for extra flavor and knead well. I made the candied oranges from organic orange peels boiled in sugar syrup with lemon juice, cinnamon and star anise.
Place the turkey fillets next to each other, slightly overlapping, to form a large piece of meat.
Place the minced meat in the middle of the fillets, on top place a row of slices of candied orange peel and a row of slices of red hot pepper. The hot pepper will create a perfect contrast with the sweetness of the oranges, so don't miss it.
Roll tight. Cut an orange into slices and arrange the slices over the roll.
Tighten the roll with thread. Now comes the last note of refinement: the anise stars. These are placed in the center of each orange slice. They will sublimely flavor the whole roll (and, to be honest with you, the whole house :))).
The roll is placed in the tray on baking paper. Quickly prepare a marinade from the juice of the remaining orange, a teaspoon of orange liqueur, a tablespoon of olive oil and a little water. Grease the roll very well with marinade and bake at 160 degrees.
During baking, grease the roll with the marinade and the sauce that the tray leaves every 10 minutes. Lubrication is very important, it prevents the turkey meat from drying out.
It is ready after about an hour and a half. Allow to cool in the oven.
Serve warm or cold. It is best cold, as an entree. As a delicious addition, you can serve it with chocolate ganache sauce and orange liqueur, obviously adding fine cubes of candied oranges. This chocolate sauce, with strong orange flavors, is a pleasant surprise for all those who will taste the cold slices of roll.
The turkey roll with oranges is very tasty and good-looking, it ennobles any holiday dish.

- For the rosemary-thyme mixture: pluck the rosemary and thyme from the stalks and finely chop on a slice. Add the mixture to the sauce and loosen the frying pan (important flavor carrier).
- Drain the pasta, add it to the sauce, mix everything well and arrange in a pasta bowl.
