Separate the egg whites from the yolks.

Lemon cake

At first glance it looks like a banal pandispan. In fact, it is a delicious cake, with a dense texture, with a pleasant and refreshing taste that can end any meal.

Preheat the oven to 160C. Grease a round tray with a diameter of 22 cm and place a greased baking paper at its base. Wallpaper the walls with flour.

Mix sour cream with vanilla, peel and lemon juice. In a separate bowl, mix the flour, baking powder, baking soda and salt.

Beat the butter with the sugar until it acquires the consistency of a foam. Add whole eggs and egg whites, one at a time, mixing well after each. Add and incorporate the cream mixture. With the mixer at low speed, incorporate the flour mixture.

Pour the dough into the prepared tray and bake the cake in the oven for 40-45 minutes. Let it cool for 5 minutes in the pan, then take it out on a grill.

Lemon cream cake

Preheat the oven to 180C. Grease and line a baking tray (20x20cm) with paper, so as to cover the walls of the tray.

Prepare the dough: Mix with a blender or electric mincer 150g flour, butter, 60g sugar and a pinch of salt, until the dough looks grainy.

Press the dough based on the prepared tray and bake it in the oven for 25-30 minutes, until it turns golden.

In the meantime, prepare the cream:

Beat eggs, egg yolk, lemon juice, 120g sugar, lemon peel, 2 tablespoons flour, sour cream and a pinch of salt.

When the dough is baked, pour it over it while it is hot and put it in the oven for another 15-18 minutes,

Let the cake cool in the pan and put it in the fridge for 2 hours before cutting it.
