We prepare the dough:
Boil the potatoes, cut into purees, then drain the water and crush them with a fork.
Prepare the mayonnaise: mix the yeast in a bowl with 1 tablespoon of sugar and 3 tablespoons of milk. Let it warm until it rises (15 min.)
In a bowl for the dough, sift the flour, put the yolks on the edge, in the middle we will put the yeast, salt on the edge, the mashed potatoes, pour the warm milk and oil and knead the crust for about ten minutes. We flour well with a handful of coca flour. Cover the bowl and leave it warm until the dough doubles in volume.
Cheese composition prepare by mixing all the ingredients well: crushed cheese, eggs, sugar, vanilla and grated lemon peel.
Yogurt sauce: Homogenize in a bowl all the ingredients, mixing well with a whisk.
When the dough is well raised, take it from the bowl and place it on a rolling surface covered with flour. Knead a little more (about 1 min.) And divide the dough into 4 pieces.
Wallpaper a pie tray with oil and flour (classic style), (I have one the size of the oven but a little deeper).
We will spread each sheet on the surface sprinkled with flour, then we will place it in the tray, on top we will put the cheese filling (which we divided into three).
We do the same with all the sheets.
When we finished with the last sheet, we portioned the pie with a deep knife to the base of the tray.
On top we will pour the yogurt sauce, taking care to penetrate well everywhere, if necessary we pass again with the knife on the grooves made.
We will bake the pie for an hour at 180 degrees, leave it to cool a bit and we can cut it warm without any problems. It's a wonder :) I only powdered it for photography, the pie is sweet enough (it's perfect for my taste, but if you think it's too much sugar, reduce the amount by 50 gr).
