RECIPE PREPARATION Milk with semolina and cherries:
Boil the milk using the BOIL program.
When the milk starts to boil, add the sugar and semolina, in the rain, stirring constantly with a silicone spatula.
We clean the cherries of seeds and tails and we put them over the milk with semolina, homogenizing everything.
With the help of the small polish, we put the milk with semolina in the desired shapes and we keep it cold for 1-2 hours. We serve it with strawberry and / or cherry syrup.
GRAY GALUSTE WITH CHERRY SAUCE
Instead of semolina with milk, what about semolina dumplings? With a little transformation we can get a quick and delicious dessert!
(for 12 pieces)
500 ml of milk
100 g gray
50 g sugar
1 pinch of salt
100 g butter
4 biscuits (Petit Beurre)
1 cherry compote (400 ml)
1 tablespoon starch
1 cinnamon stick
grated peel 1 lemon
1 teaspoon lemon juice
We prepare the semolina with milk for the beginning. Bring the milk to a boil, add the sugar and a pinch of salt, then the semolina in the rain. Stir so that it does not stick to the bottom of the pan. When the composition has thickened, remove from the heat and let it cool, but not completely, because we add the yolks when it is still warm.
Homogenize the composition. We grind the biscuits and fry them a little in 20 g butter, only until they change their color a little.
Heat the rest of the butter in a pan. We take the semolina with a damp spoon, trying to give it an elongated shape before putting the dumpling in the butter. Brown the dumplings evenly, then take them out and put them in the pan with the fried biscuits.
Roll the dumplings well in the biscuits before placing them on the plate.
We prepare the cherry sauce. Strain the compote and leave the fruit separately. Boil the compote liquid with cinnamon, juice and lemon peel. Dissolve the starch with 2 tablespoons of water and pour it into the sauce. We continue to boil until it starts to thicken, but not very hard & # 8211 by cooling it becomes even thicker. Stir constantly, not to make lumps.
Serve the semolina dumplings with sauce and cherry compote.

a bowl of fresh cherries without seeds (cherries, blackberries or blueberries also work)
200g sour cream (I used with 12% fat)
vanilla powder (optional)

Separate the egg whites from the yolks. We mix the egg whites until we get a hard foam.
Mix the yolks very well with the sugar until you get a light cream that has doubled in volume. Then add sour cream and semolina and mix a little to mix. Let this composition rest for 10 minutes to swell the semolina a little.
We also integrate the egg whites, mixing lightly with a spatula from the bottom up.
Pour the composition into a silicone bowl with a diameter of 25 cm (or another bowl if we use baking paper) and distribute half of the amount of cherries easily sticking in the composition. Distribute the other half on top without pressing.
Bake in the preheated oven at 180 degrees C for 35 minutes or until slightly browned and pass the toothpick test.
