Eggplant bread

Eggplant bread

  • salt
  • flour
  • biscuit
  • frying oil

Preparation time: less than 30 minutes


Peel the eggplant. Cut them into round slices of approx. 1cm. Salt them and let them absorb for 15-20 minutes.

Heat the oil. Mix the flour and breadcrumbs (put equal parts). Beat the egg. Put the eggplant slices through the egg yolk, mix the flour and breadcrumbs and fry them on both sides in the hot oil.
