We cut the eggplant, the zucchini (including the peel) into cubes, we cut the peppers into strips. Put the vegetables to harden, one by one in oil.
When we have hardened them all, we put them in a bowl and start preparing the sauce.
Heat the oil, heat the onion, add the diced tomatoes, garlic, bay leaf, salt and pepper.
We boil everything.
Add the previously prepared vegetables, mix everything.
Garnish with chopped parsley and serve immediately.
