  • 4 large potatoes, peeled and cut into strips
  • 125g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 250ml milk
  • 1 egg
  • 1 litre vegetable oil for frying
  • 675g cod fillets

  1. Place potatoes in a medium-size bowl of cold water.
  2. In a separate medium-size mixing bowl, mix together flour, baking powder, salt and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  3. Preheat the oil in a large pot or electric frying pan to 180 degrees C. Fry the potatoes in the hot oil until they are tender. Drain on kitchen towels.
  4. Dredge the fish in the batter, one piece at a time and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 180 degrees C. Drain well on kitchen towels.
  5. Fry the potatoes again for 1 to 2 minutes for added crispness.

Alternatives to cod:

Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

nearly five stars i followed the recommendations in the comments like chilling the fish batter for 20 minutues before frying and the liquid i used was very cold the batter stayed on very well and it turned out to be a great taste espically the chips make the chips chunky as they are WAYYYYY better the reason why i didnt give this recipe full stars is because it just didnt have that kick of flavour that you get with beer battered chips down the english coast (near where i live) but im sure if i used beer it will be much more flavourable! it was still very nice crunchy and beautiful batter but it just didnt have that final kick to set it still all in all a lovely Fish And Chips thanks for posting-09 Aug 2017

This recipe works GREAT provided a few basic frying rules are adhered to:1) DO NOT fry past the point when no air escapes the food. The minute steam stops coming out grease is getting in.2) Keep finished pieces in a 250 degree oven until the last one is done, right before serving. The heat will keep the oil draining off and the batter crispy.3) Make SURE the oil temperature is hot enough. The MINUTE the food goes in the oil loses a good 25-50 degrees worth of heat. A great candy/fry thermometer or digital thermister is key to keeping a constant oil temp, and adjusting as needed every time food goes in wll keep the results uniform and the food looking good.This batter is wonderful with beer instead of milk, or in addition to, and small pieces of fish fry more evenly than entire filets. Keep the basic frying rules in mind and it becomes quite simple to make crispy, NOT GREASY fish and chips with ease. The other quick tip I'd give is make SURE the food is good and cold, especially the potatoes, before trying to fry. That will help the them not become limp too.-20 Sep 2007

Being that I am English, and grew up with outstanding Fish and Chips, it's not really surprising that homemade F&C rarely come close to hitting the mark. With regards to this recipe, the chips were quite good (make sure you cut them nice and chunky, not skinny little fries). The fish batter, however, wasn't good - bland and oily, and it turned mushy while the other pieces of fish were being cooked. I MUCH prefer the beer batter in the 'Fish Tacos' recipe submitted by Tanya; the batter is light, crispy, flavorful - exactly how it should be. Thanks anyway.-27 Sep 2005

Fish and Chips in a Crispy Coating?

I’m sure you’ve noticed the fish isn’t battered (it actually is battered), but coated in a crispy, orange-colored crumb coating which is called “Ruskoline”. We just call it fish dressing, and recently I had called my cousin Pete, who ran the fish and chip shop until just four years ago, to ask about sending over some of this dressing. His wife, Helen, looked into the cost of shipping and it was outrageous, but I was actually thinking about having her send it anyway.

Until I discovered a very similar product on Amazon of all places! Paxo golden breadcrumbs, and it was much more reasonable than paying the outrageous shipping of the Ruskoline from the UK. So now that I know this product is available to those of us in the US, I can finally share my dad’s recipe for fish and chips!


Preparation

Step 1

Place racks in upper and lower thirds of oven preheat oven to 425°. Mix onion, 2 Tbsp. vinegar, and a big pinch of salt in a small bowl to combine let sit at least 10 minutes and up to 1 hour. Drain off vinegar and discard.

Step 2

Meanwhile, toss potatoes and 3 Tbsp. oil on a large rimmed baking sheet season with salt, then toss again. Arrange in a single layer. Roast on top rack, undisturbed, until browned and crisp underneath, 20–25 minutes. Turn potatoes over and reduce oven temperature to 325°. Place cod on a small rimmed baking sheet and drizzle with 1 Tbsp. oil. Season with salt and sprinkle with za’atar. Slide onto bottom rack in oven and roast until fish flakes easily with a fork and potatoes are browned all over, about 10 minutes.

Step 3

Stir olives, mint, remaining 2 Tbsp. vinegar, and remaining 2 Tbsp. oil into pickled onion. Serve cod and potatoes topped with olive mixture.

Definitely needed more zaɺtar. Iɽ almost double it and add some red pepper flakes. I took heed of advice from some commenters below. 1. Don't lower the temp half way through. 2. Cook the fish for 14 minutes. 3. Add Pomegranate seeds to your tapenade! 4. I personally added paprika to the fries, so so so good!. Overall the fish somehow lacked flavor without adding much more than suggested seasoning but the fries. wowza. A must make.

The olive mix really makes this whole dish. Like others I had to cook the fish a bit longer and found it's flavor to be pretty bland. This may have something to do with the quality of my zataar. Next time I think I will add extra sumac and marinate the fish for 30 minutes ahead of baking. The suggestion below of adding golden raisins to the tapenade sounds delish as well! All in all, it was a very simple, quick, and tasty recipe.

Agree with not throwing out the vinegar just to re-add it. I added a good amount of pomegranate seeds to the olive mixture and it really brightened up the whole dish. My girlfriend thought that was her favorite part.

Why throw out the 2 Tbsp of vinegar used to marinate the onions, only to add 2 Tbsp back in? Does the vinegar get too onion-y?

What a great healthy way to eat fish and chips! As one other reviewer mentioned, it did take longer to cook, especially the fish. The recipe calls for one piece, but I think that it would cook more consistently with smaller loins.

I followed the recipe exactly as written and I must say. WOW! If you are a fan of Middle-Eastern flavors, then this will surely please you. The zaɺtar gave a wonderful flavor to the fish, but eating a bite along with a bit of the creamy potato and the cool minty olive mixture together was a flavor explosion! I served the fish on top of a bed of raw baby spinach, which went really well with the dish. The heat of the fish wilted the spinach ever so slightly, which was perfect. Paired with a 2013 Ferrari-Carano Fumé Blanc, the meal was truly restaurant quality. I look forward to making this again!

Used sweet potatoes instead of Yukon gold. Other than that sub, went by the fecipe. Will keep working on this recipe with various fish.(salmon comes to mind). Will add thinly sliced zucchin, cauliflower and/or broccoli florets to the quick pickled onions next time. Just to see.

I've made this several times now. The cook times listed seem to be a bit short for both the potatoes and the fish. I've been chucking cauliflower trees in with the potatoes which is delicious. The onion-olive topping is by far the highlight of this recipe.

Don't skip the olive-onion-mint topping! It's fantastic with the cod, and brightens up this dish immensely for the amount of effort it takes. I really love these kinds of recipes - simple short ingredients list, and a method you can get the jist of with a skim. Honestly can't fault this it's such a ridiculously easy and yummy dinner.

Delicious! Loved the way the potatoes “souffléd” and the cod was perfectly cooked with the recipe method. Not sure if you’d call the olive/onion mixture a tapenade or a salsa, but a great complement to the potatoes and cod.


The batter

And now for the super secret fish batter tips.

It’s probably not all that secret actually. I’m sure my Mum would have gotten her batter recipe from a Women’s Weekly magazine or something. But she’s very proud of her secret batter recipe. And it definitely makes an awesome fish batter.

Her first super-secret tip is to always use self-raising flour. This is what creates that light, puffy batter that crisps up to perfection in the hot oil.

Her second secret tip is to lightly dust the fillets in flour before dipping them into the batter. This helps the batter to stick, and creates a crispy skin between the fillet and the batter. This little pocket of air prevents the fish from being steamed too much inside the batter.

Something else to note, is to only fry 2 – 3 fillets at a time, max. As soon as the cold batter hits that hot oil, the oil will cool down really quickly. If it stays too cool, for too long, because you’ve filled up the fry pan with fish, the batter won’t crisp up and the fish will take too long to cook.

  • Aroma, which increases the customer flow.
  • Appearance, which decreases the cost of making the dish.
  • Eating Time, which is the time it takes for a customer to eat the dish. It is static and cannot be raised like the others.

As you make a recipe several times its attributes will increase. The sum of the values of each attribute is equal to the food experience. As the food experience increases so does the dish grade: from D, the lowest to S, the highest.

What Type of Fish To Use?

So what is the best type of fish to use for classic beer battered fish?

Well, to be honest, there are a few great options. And the best choice may depend on where you live and what type of fish that is available in your area.

Our very favorite fish to use for a fish fry is wild-caught, Alaskan Cod. It is what most restaurants use for their fish and chip baskets.

Cod is able to handle the coating of breading and the hot temperatures required to cook perfectly.

Slice your fish into hand held size pieces for the true experience.

However, those that don&rsquot mind farm-raised fish, tilapia is a popular choice. Tilapia is a very mild fish that will take on the taste of the batter seasonings.

In addition, catfish is also a popular choice. Although the catfish has a strong and distinct taste, it is extremely delicious when deep-fried.

But don&rsquot forget what is also available locally. Wall-eye, perch and pollock are some other fantastic options for beer battered fish and chips!


Why Tofish is the better option&hellip

Fish was actually one of hardest things to give up when I went vegan (besides cheese, obviously because cheese addiction is a thing). But even in my pre-vegan days, the options of either fish from the sea loaded with micro-plastics or farmed fish loaded with antibiotics to survive in the crowded and super filthy enclosures were both terrible. While this Tofish doesn&rsquot have the consistency of fish (it&rsquos still tofu), it certainly looks like &ldquoreal fish&rdquo! That&rsquos enough reason for me to share the recipe with you!


Best Fish To Use

Any firm white fish is perfect for these keto fish + chips. My go to’s are cod or mahi mahi. Halibut works too! Heck, you could even make this with skinless salmon.

I’m sure to always use wild caught fish. Costco has great wild caught cod + mahi mahi in their freezer section for a cheap price.


New England Fish Fry

Jack and I live just north of Cape Cod, Massachusetts – and over the years, we’ve eaten at many of the local seafood restaurants and clam shacks in the area. Most of the time, Jack orders the clam plate (whole bellies of course!) while I order the New England Fish Fry.

A typical New England Fish fry is most often haddock or cod that has been dipped in a light breading before it is fried. The coating is more delicate than the one we used in this fish & chips recipe – and it really allows the tender flavor of the fresh fish shine through.

Over the years, Jack and I have tried to recreate the perfect New England Fish Fry coating at home – using flour, egg wash and bread crumbs. But I have to admit, we haven’t come close at all – until today!

I recently spotted a fish fry recipe in Coastal Living magazine – showed it to Jack – and we immediately wanted to try it. The recipes uses Wondra flour, large amounts of corn starch, as well as baking powder in the dry mix (plus seasonings), and eggs and water in the wet mix.

Now – I could tell that Jack was ready to dismiss this recipe (and he will admit to that too), because it was very different than any other fish fry recipe we’ve tried making before. But that fish fry recipe was excellent! The haddock fried up light and crispy on the outside, and the inside was super moist and flaky. (Just like the New England Fish Fry at our favorite local seafood restaurant!)

In our recipe below, we did make some adjustments to the original recipe – scaling back on the salt, as well as the overall amount of breading. (It was just too much.)
