let the butter soften a little and rub it with the other ingredients until it becomes frothy, then add the mixture with the flour and start kneading by hand until everything is well blended.
Divide the dough in half, put it in foil and put it in the freezer for about 10 minutes.
For the filling: grate the salted cheese (telemea) or crush it with a fork and mix it with the sweet cheese, add the sugar and vanilla sugar, essence, eggs and mix.
Remove the dough from the freezer, line a 26/36 cm tray with baking paper and grate some of the dough on the large grater, directly into the tray.
Gently level with your hand, place the cream cheese and grate the other part of the dough on top.
Level and bake for 40 minutes at 180 degrees.
Let cool and portion.
